Prawns with lemon and coconut

Serves 4

500 g prawns  
200 ml coconut milk
2 tbls lemon juice  
1/4 tsp fish sauce
1/4 tsp sugar  
1/4 tsp salt  

= available at Asian grocers


Takes 15 minutes

  1. In a pot bring coconut milk to boil. Add prawns and cool for one minute. Let simmer one more minute
  2. Remove prawns from milk.
  3. Add lemon juice, fish sauce, sugar and salt and stir. Top the prawns with this sauce.

TIP: Serve with rice
