Panang curry with pork |

| Serves 4 |
|
|
| 500 g (1 lb) pork fillets |
|
|
400 ml (13 lf oz) coconut milk  |
|
|
2 ts panang curry paste  |
|
|
2 tbs fish sauce  |
|
|
| 2 tbs sugar |
|
|
| 1 ts lemon juice |
|
|
| |
|
|
| |
|
|
= available at Asian grocers |
|

Takes 20 Minutes
|
- Slice pork.
- In a pot heat half of the coconut milk and the curry paste.
- Add meat, rest of the coconut milk, fish sauce, sugar and lemon juice.
- Bring to boil and simmer for ten minutes.
TIPP: Serve with rice or salad. |
